The Valle de Ojos Negros presents altitude conditions nearing 720m above sea level, with winters that provide adequate temperature gradients, generating conditions in which Pinot Noir reaches an optimal maturity. The formation of double string trellis in the vine insures that the exposure of the cluster to sunlight is kept only for the time necessary. The tasks in the grapevine are almost in its entirety carried out by hand, from the pruning to the harvest.
Winemaking
Though a low speed oscillatory equipment there was a careful de-stemming, separating the only highest concentration grains. Later in this process the must was placed in 2 separate tanks, in both pursuing the safeguarding of a pre-fermentation mashing of approximately 8°C for less than 48 hours. In the first tank there was a fermentation of minimal intervention, without additional yeasts or other enological. In the second case a traditional process was carried out, understanding the potential of the variety in both facets. At the end of fermentation both tanks were de-wined, carefully separating the seed coat and only sending flower wine to the barrel, in which it remained for at least 6 months. In the selection of barrels there were chosen only the ones that developed the best qualities, fusing the minimal intervention and the traditional method of fermentation. The treatments of stabilization and clarification were carried out at the indispensable minimum, thus we can find a slight amount of tartrates through the passing of time.
