Originating from plants that have adapted to the conditions of Valle de Guadalupe and have survived for more than 30 years. The vineyard is located close to the mountain, having a very specific microclimate regarding wind and mineral concentration at its surface. Its formation in bilateral conduction achieves the adequate protection of the clusters permitting maturity to be reached correctly. The harvest was realized manually over the second week of September.
Winemaking
At the receiving of the grape a meticulous de-stemming is performed, in which we insure the correct separation of grains and the complete elimination of stems. During the previous hours before the launching of fermentation, the must was maintained at low temperature, achieving a successful extraction of components that provide the high coloring concentration to the resulting wine. During the stay in the tank, the have been realized pump overs in the morning and afternoon, extending for approximately 25 days up to the point of the separation of pomace. The barrels used for its aging are French oak, in which it has rested for 18 months before the selection of barrels, tasting one by one, we’ve chosen a small block where the evolution has been singular, leaving them in site until reaching 48 months for their ensemble and bottling.
