Viticulture

The grapes we use for this icon from our winery come from two different homelands, a Chardonnay from sandy soil and a Viognier from a sandy loam. The vineyard finds itself at a little over 300 meters above sea level and features a Mediterranean climate

Winemaking

Carefully pressed by entire cluster and sheltered from air swings, we keep the must at a low temperature of around 13°C. The fermentation curve is elongated through gradual appearance of the primary and secondary aromas. The yeasts selected extract the qualities of each varietal, bolstering little by little the resulting wine.

The Chardonnay takes a different path, reposing in casket for a little over 6 months during which the batonage technique grants body and smoothness to final blend.
