The closeness of the vineyard to a brook that emerges sporadically along the years, gives the soil particular profundity resulting in greater quantity of sand and silt. In the part closest to the surface it’s loam that predominates. The formation of trellis with bilateral lace provides a good level of shade, allowing the clusters to maintain freshness protected from direct sunlight.
Winemaking
The process in the winery initiates with a pressing of entire clusters, protecting to the maximum the must from oxygen contact. Once in the tank it is maintained at low temperature, pretending with this the separation of thick backgrounds. The next day, a careful decantation becomes a fundamental task, obtaining a must with impeccable cleanliness. The fermentation is induced with selected yeasts, which will enhance the qualities of the final wine. At the first indications of fermentation activity, it’s taken to new acacia barrels, where it will remain until the end of the process.

Pairing
More daring pairings. The freshness, acidity but also the creaminess in mouth permits seafood pairing without doubt: shrimps, salmon “tostadas” and tuna sashimi. We’ll also pair with fresh salads prepared with fresh cheese.
