The zealously kept plants in the Valle de Guadalupe are found near the side of the mountain. The soil made up of loam, granite and silt, permits the roots finding the adequate medium for living. The ideal point of maturity was reached over the first week of September, a moment in which a delicate and totally manual harvest was carried out. The plant, still with sufficient vigor, has allowed the grape to satisfactorily complete its cycle, achieving sufficient components for its process in winery.
Winemaking
After receiving the grape in the winery, it is carefully de-stemmed, sending to the tank only the grains where the fermentation is to be realized. In this site the must is maintained at low temperature during the first hours, letting us generate an adequate extraction of the components that enrich our wine. Fermentation reaches an average peak of 26° to 28°C. At the end of this process there is a separation of flower wine, which is sent to the aging barrels.
